Watermelon Coconut Sago
refreshing and creamy! who knew watermelon and coconut goes so well together?
hello hello! I’m back with another sago recipe, no surprises there! I’ve genuinely been making a lot of these because it is summer here in Australia, so I’ve been craving hydrating desserts like these to keep cool in the heat.
I get so excited when watermelon goes on sale (this one was 99c per kg), because I end up with so much watermelon to snack on and my favourite go to juice is watermelon & strawberry (so refreshing!). anyways, enough of me rambling about watermelon…
• WATERMELON COCONUT SAGO RECIPE •
INGREDIENTS
- 1/2 cup (100g) sago tapioca pearls
- 1/2 watermelon, scooped out as balls or cut into small chunks
- 300ml coconut milk
- 200ml watermelon juice
- 2-3 tbsp sweetener (I used agave)
- Nata de coco or other jelly toppings
- Ice
DIRECTIONS
1. Add sago pearls to a large pot of boiling water and boil for 5 mins. Then switch off heat and leave it covered for 15 mins.
2. Once cooked, drain and rinse under cold water and set aside.
3. Cut watermelon in half and using small scoop to scoop out watermelon balls, or use knife to cut out the meat and cut into cubes. Scrape out remaining watermelon half to make a bowl.
4. Add back in the watermelon, nata de coco or other toppings if using, coconut milk, watermelon juice, sweetener to taste and ice. Mix well and best chilled before serving.
